Let's begin with the dough, the most important part of the pizza! Here are the ingredients, courtesy of Roberta's Pizza and The New York Times!

Ingredient Amount
All-Purpose Flour 153 grams
00 Flour 153 grams
Salt 8 grams
Instant Yeast 1/2 tsp
Water 200 grams
Olive Oil 1 tsp
  1. Add the yeast to the water. Make sure that the water is warm (about 80 degrees Fahrenheit).
  2. Mix the two flours together.
  3. Add the oil to the water. Add the water/oil mixture to the flour. Mix until a shaggy dough forms.
  4. After all of the flour is mixed in, allow the dough to rest for 30 minutes.
  5. Add the salt. Now, knead the dough until it forms a smooth ball, approximately 10 minutes (Do not tear the dough during this process).
  6. Put the dough in a large bowl and allow to rise for 24 hours in the refrigerator.
  7. Degas the dough and split into two pieces. Roll the dough into two tight balls. Refrigerate for 24 more hours.
  8. 24 hours later, the dough will be ready to use!

This video will show you how to mix, knead and form the dough. Note that I recommend a two-day cold fermentation for better flavor!

  1. Open the dough according to the video below.
  2. Top with your desired toppings. A classic is the Margherita pizza with uncooked tomato (San Marzano tomatoes preferably) sauce , high quality mozzerella and basil.
  3. Bake for 5-8 minutes in a 550 degree Fahrenheit oven (on a pizza stone that has been preheated for at least one hour).
  4. Enjoy!

This video will show you how to open your dough when you are ready to make your pie!
